Into the Krauts – Golden and red Sauerkraut

November 19, 2017 by nadel&gabel

5 1/2 years of food blogging and quite some more of cooking … it took such a long time for me to attempt one of the most iconic German dishes, Sauerkraut. The ‘Krauts‘ – the view from outside doesn’t leave any doubts. Although Germans weren’t the first that developed the idea of lacto-fermented cabbage. I, for my share, have made already a few experiences with wild fermentation – homemade yoghurt, Kimchi ,water kefir -, learned about the health benefits, especially for digestion and […]

Life and the whole thing – Oriental birthday buffet

February 19, 2015 by nadel&gabel

“My head is an animal” these days, bombarding me with all those existential questions: So many paths to go – but which one should I go? Is there a right one, a right way of life – at least a right one for me? What’s true about “there is a time for everything”? In which phase of my life am I at the moment? Clearly, there are a lot of answers, that one gets offered, implicit and explicit expectations, what […]

Back to the roots – Oven-roasted root vegetables with roquefort sauce and millet

February 8, 2015 by nadel&gabel

Lately, when I strolled over our local farmers market, I stopped immediately: Beautiful mini beet roots, carrots, parsnips catched my eye – and in my mind they formed some ideal winterdish, oven-roasted with warming spices, together with some kind of grain as side and a flavorful sauce that could hold against the earthy roots, giving the whole dish some more depth. Although I think most fruits and vegetables benefit from oven-roasting and thereby concentrating flavours, I think this is especially […]

On hedoné – Beetroot crackers with poppy seeds

January 25, 2015 by nadel&gabel

My after-christmas-fed-up-with-sweet-stuff-phase turns out to be quite longlasting this year … which isn’t such a bad thing. Sometimes you need a break to overcome satiety, to be capable for real indulgence again. Old Epicurus already knew this… Meanwhile I’m noshing these savoury crackers … with only a hint of (natural) sweetness that comes from my favourite vegetable these days: beetroot. It adds as well a nice pale red colour to the crackers. In case you’re wondering where all the scalloped […]

This seasons favourite combo – Sandwich with beetroot, feta cheese and walnuts

January 7, 2015 by nadel&gabel

In culinary terms my autumn-winter-season this year tends to be somehow circular … I can’t help turning back to the same combinations of ingredients again and again. Boring? No, super yummy! Pumpkin/squash-gorgonzola-sage has become a staple in our dinners since the first pumpkins appeared at the market and have since continously found their way into galettes, pizzas, pasta dishes and casseroles. A similar things is true for this other divine flavour combination of baked beetroot, feta cheese (alternatively: goat cream […]

Winter food – Hearty sourdough waffles with spinach and toasted hazelnuts

January 18, 2014 by nadel&gabel

Winter – especially after christmas time – for me is the season of savoury cravings. I want hearty, warming, cheesy food. Not that the citrus season leaves me untouched – but if I have to choose… Let me first of make clear, that I am close to an amateur when it comes to sourdough (although I am German 😉 ). I am trying to learn and experimenting a lot at the moment. But I am still sticking to the beginner […]
