As if… – Carob cake with dates

October 18, 2015 by nadel&gabel

As if… this cake was made with chocolate, but wait, it’s not chocolate but carob powder! I had long forgotten about this product. But when I stumbled across it in the baking section of our local organic supermarket, memories came back. Memories of carob milk that we drank as kids and that resembled a cup of hot chocolate. Wise mum, who knew that the powdered fruits of the carob tree were much healthier than cocoa: less fat, no caffeine. If it tasted […]

Sweet power – Greek sesame pastéli

March 17, 2015 by nadel&gabel

Believe me: When it comes to low sugar and coping with it I am an expert. Already a while ago now I’ve found my perfect emergency treat: sesame brittle. Its effect is quite fast and long lasting. If you would dig into my various handbags and totes, you would very likely find a package of this crispy sweet treat on every bottom. Especially when I am travelling, not knowing when I can grab the next bite, this is an ideal […]

A little something – Homemade truffles and a DIY gift box

December 21, 2014 by nadel&gabel

Now it’s the time when you can count the days till the christmas holidays are finally here. And before I retreat solely to the analog world for a few days, enjoying time with my family and long not seen friends, here’s a last christmas gift idea, that you still can easily whip up in case of urgent gift shortage. I made this nice collection of truffles for some of my colleagues. But your neighbours, your postman, your aunts and uncles […]

Baked cosiness – Spicy pumpkin bundt cake with apples

September 20, 2014 by nadel&gabel

Every season has its cake (at least one!). This one is packed with autumnal produce like pumpkin and apple … accompagnied by the warming spices cinnamon – apples are hard to imagine without – ginger and nutmeg. Can a cake be described as cosy? – If yes, than this cake IS cosiness. It’s an easy to mix up cake, not too sweet, moist, flavourful and colourful – just the right thing to nibble with a cup of tea or coffee […]

It’s magic – Crema catalana cake

March 2, 2014 by nadel&gabel

You`ve probably alread heard of this magic custard cake that is spreading throughout the internet. It’s magic because in the oven the batter forms different layers and you’ll end up with a soft custard bottom and a fluffy top. For my cake, I used this recipe as a starting point to uplift to new spheres of cake heaven. The other inspiration for this recipe came… 1. from my current enthusiasm for orange zest and the oranges lingering in my fruit […]

Upside down – Caramelized rhubarb cake with elderflower ricotta topping

June 3, 2012 by nadel&gabel

Our traditional family recipe for rhubarb cake (and a lot of other fruit and berry cakes) consists of rhubarb chunks that are spread on sweet batter and are topped with nutty meringue. Although I love this great recipe from my grandmother, an all time favourite, this year I experimented a bit with some other ways to bring rhubarb, my tart love that’s always gone to fast, into a cake.

The Sweetest Thing – Salty dulce de leche

October 25, 2011 by nadel&gabel

Dulce de leche probably is the sweetest and most sticky thing I have tried in my life… and from the first time I tasted it, I couldn’t stop eating! My preferred way still is on bread or on top of a fresh croissant, but its full caramel flavour is also great in desserts, cakes and the like. You can find a lot of variations in texture and colour, depending on the cooking time. For me it is best when it […]

Caramel pudding with pear compote

August 15, 2011 by nadel&gabel

I had used not all of the pears I had bought at the market for my gorgonzola-pear-pizza, but they were fully ripe and juicy – they would have survived maximally one more day. I decided to use them in a quick compote with a hint of ginger – in the end, actually only one pear made it into the compote, the others went straight into my stomache…
