Flavour horizons – Homemade spice blends

December 15, 2016 by nadel&gabel

This year, my Christmas presents – yes, almost done – are a bit more on the (online) store bought side than on team DIY. Not by concept, it just happened. Nevertheless you won’t find a gift guide on this blog. I don’t think anyone needs another one. What you’ll find here – like every year – is some inspiration for homemade Christmas presents. One of my homemade presents is this set of spice blends. I chose three of my favourite […]

Hybrid – Udon salad with tofu

August 27, 2016 by nadel&gabel

Weariness and laziness are creeping in. It’s probably the heat (Who would have believed that we would have such a series of hot summer days at the end of August once again?), while already the first signs of autumn are visible. The prospect of a regular schedule of work that is coming closer again, the slightly rising pressure to get started again. Fatigue and melancholy. Somewhere in between… …like this salad which is kind of a hybrid between Heidis famous otsu […]

Summer sandwich – Easy Chicken Bánh Mì

June 28, 2015 by nadel&gabel

After talking a lot about Bánh Mì lately, I guess it’s time now to provide you with a recipe – although it is more rough notes than exact quantities. Bánh Mì – the Vietnamese adaption of a baguette sandwich – can be made in numerous variations. With or without pâté, with grilled pork, chicken or tofu, with different pickled vegetables. The essential ingredients that make a Bánh Mì a Bánh Mì are: baguette (crunchy outside, soft inside), sweet and sour […]

Preserving flavour – How I store herbs

March 28, 2015 by nadel&gabel

After posting the herbed pasta recipe last week, I thought it maybe would be convenient to tell you a little bit about how I store and preserve my herbs. We don’t have a garden or balcony (yet?), so I am always limited with growing my own herbs (Only rosemary survived the winter on at the kitchen window :(.) But these days, the farmer’s markets are displaying an expanding range of fresh herbs. But how to keep them if you don’t […]

Back to the roots – Oven-roasted root vegetables with roquefort sauce and millet

February 8, 2015 by nadel&gabel

Lately, when I strolled over our local farmers market, I stopped immediately: Beautiful mini beet roots, carrots, parsnips catched my eye – and in my mind they formed some ideal winterdish, oven-roasted with warming spices, together with some kind of grain as side and a flavorful sauce that could hold against the earthy roots, giving the whole dish some more depth. Although I think most fruits and vegetables benefit from oven-roasting and thereby concentrating flavours, I think this is especially […]

Feed a crowd – Winter Chili con carne à la Jamie

December 6, 2014 by nadel&gabel

Chili con carne … for me is kind of synonymous for food in huge pots feeding crowds – the classic recipe that was cooked in youth camps, on school trips, big partys. You only needed one big pot. Everyone could do it (somehow) and you could cook together: someone chopped masses of bell peppers, another one onions until his/her face was covered in tears, someone stir-fried minced beef … and the less talented at least could open the cans of […]

… some more homemade ketchup variations

June 20, 2014 by nadel&gabel

After my first experiment in ketchup making – all of it already eaten or given away as presents – I made a second batch last weekend … or to be precise three variations on my basic recipe: a fruity one with apricots, … …a fresh herby one with green tomatoes, mango and coriander and … … a smoky BBQ ketchup with pimentón dulce ahumado and coffee. Amazing – all of them … and I am thinking already about new flavourful […]

Love it or hate it – Mojo verde

August 12, 2013 by nadel&gabel

Coriander – I know, this is one of those love-it-or-hate-it herbs (Read also this article on coriander/cilantro on Food52.). And if you’re on the hate-it-side you’re allowed to skip this post, because the basic ingredient of this herby dip is coriander. But as I am definitely in the club of coriander lovers, I fell in love with this sauce the first time I tasted it. It was in a Spanish tapas bar and nearly each tapas was served with those […]

Fava bean salad with grilled chicken

June 2, 2011 by nadel&gabel

In southern Germany, where I come from, fava beans are called “Saubohnen” (sow beans) – not a very promising name. No wonder that I didn’t encounter those beans in my previous culinary experiences.
