Addictive! Eat one of these little sweeties and you won’t be able to stop until the plate is empty – except for a few crumbs. At least this happened to me when a friend offered me them the first time. I urgently needed the recipe and I didn’t fully believe her, when she said that the recipe was totally easy, probably the most easiest recipe ever …
But I can tell you: She didn’t exaggerate! Only four ingredients, only whisking them together … that’s it! And they’re so yummy (Am I repeating myself?) … it’s basically a kind of cheese cake, with some bite thanks to the semolina. Nice little sweet gugls, just the right thing for a rainy weekend! I think they’re best fresh from the oven, but they’re still delicious on the day after.
And because those mini gugls were so easy to make and so nice to look at, I had much time to take pictures of them … uh, you’re wondering why you don’t count 30 mini gugls on the picture … how can I explain 😉
Curd cheese mini gugls/muffins (makes about 30)
ingredients
250 g curd cheese, 100 g cane sugar, 2 eggs, 4 tablespoons semolina, 2 tablespoons lime (or lemon) juice, 1/2 teaspoon orange (or lemon) zest [optional], icing sugar [optional]
preparation
Preheat oven to 180° C. This is maximum easy! Just whisk everything together, fill into mini gugl or muffin moulds and bake for 15-20 minutes. Cool on a cooling rack and optionally dust with icing sugar.
